Garlic Potato Wedges
Idaho Potato wedges brushed with garlic and basil are a tasty treat that can be eaten as a snack or side dish.
3 large Idaho Potatoes
2 tablespoons margarine
1/2 teaspoon garlic powder
1/4 teaspoon dried whole basil
1/8 teaspoon salt
Scrub potatoes; cut lengthwise into quarters. Combine margarine, garlic power, basil and salt in a 1-cup microwave-safe glass measure. Microwave at HIGH 20 to 30 seconds, or until margarine is melted.
Brush potatoes with margarine mixture. Arrange wedges, spoke fashion, on a large glass plate or in a large pie plate. Cover loosely with wax paper. Microwave at HIGH 9 to 11 minutes, or until potatoes are tender; rotating dish one-half turn after 5 minutes and brushing with any remaining margarine mixture.
Makes 4 servings
