FAT FREE FRENCH FRIES
"I came across this recipe in a fitness book I was reading the other day. I was a bit skeptical so I gave it a try. Surprise, it works. The egg white causes the potatoes to have the crisp texture of a real French fries."
1 lb. potato (cut into French fry shape)
1 egg white, beaten until frothy
Black pepper, to taste
Chili powder or ground cayenne pepper, to taste
Combine all ingredients and toss well so the egg white coats the fries. Spread in a single layer on a parchment-lined cookie sheet.
Bake in a 350 degree F oven for 20-30 minutes or until tender. Turn once during cooking.
