Ginger, Mint and Honey Marinade for Lamb

Yield: 1 1/2 cups
1 cup fresh orange juice (about 2 oranges)
salt
freshly ground pepper
3 garlic cloves, minced or 1 teaspoon ground
2 tbsp finely chopped fresh ginger
2 tbsp chopped fresh or 1 mint teaspoon dried
1/4 cup honey
1/4 cup soy sauce
Combine all ingredients and mix well. Pour over lamb. Marinate in refrigerator overnight. Remove from refrigerator 1 hour before grilling.
