Recipe: Golden Cheese Dunk (using evaporated milk) (Carnation, 1974)

GOLDEN CHEESE DUNK

3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1 teaspoon dry mustard
1/4 cup finely chopped onion
2 teaspoons dry parsley flakes
3 1/3 cups undiluted Carnation Evaporated Milk
4 cups (about 1 pound) grated process American cheese (like Velveeta)
crackers or toast points (for serving)
paprika or parsley (option garnish)

Melt butter in large saucepan over medium heat. Remove from heat.

Add flour, salt, mustard, onion and parsley. Stir until smooth. Gradually add Carnation. Cook over low heat until thickened and smooth, stirring constantly.

Add cheese and stir until cheese melts.

Serve in chafing dish with crackers or toast points. Garnish with paprika or parsley, if desired.

Makes about 5 cups
