Hope, here is one recipe previously posted to TKL by Kaye on June 07, 1997.
I sounds close to the one you want. There are more easy recipes on TKL using graham crackers... just use the search box for "graham crackers." I think you will be delighted. Happy Holidays.

Graham Cracker Icebox Cookies

2 sticks oleo
1 cup sugar
1 egg
1/2 cup milk
1 cut nuts, chopped
1 cup coconut
1 cup graham cracker crumbs
whole graham crackers

Line a 9x13 inch pan with whole graham crackers.
Melt oleo. Beat egg, milk and sugar together. Mix
with melted oleo and bring to a full boil. Add nuts,
coconut and crumbs. Pour over layer of graham
crackers. Top with more whole graham crackers.
Mix icing and pour over the cookies. Chill for 2
hours. Cut into squares.

Icing:
3/4 stick oleo
1 Tbl. milk
1 teas. vanilla
2 cups powdered sugar
