Great Bean Gumbo

1 1/2 cups frozen okra
1 cup chopped onion
1 clove garlic, mashed
1 Tbsp. olive oil
1/2 cup diced celery
1 medium green pepper, chopped
2 (16 oz.) cans whole tomatoes
1/4 tsp. black pepper
1/4 tsp. cayenne pepper
1 tsp. thyme
1 cup frozen peas
1 (16 oz.) can kidney beans, rinsed and drained
3 cups cooked brown rice
Cook okra in a cup of boiling water until just tender. Set aside. Saute onions and garlic in olive oil until soft and golden. Add celery and green pepper and cook until tender. Add tomatoes, and heat to boiling. Reduce heat. Add pepper, cayenne, and thyme, and simmer for 45 minutes. Add cooked okra, peas and beans, cooking for a few minutes longer until the peas are done. Serve over cooked brown rice.
Each of the 6 servings contains 300 calories and 4 grams of fat.
