FROM my collections and I've tried them myself. I remember someone said that Greek Salad is just olive oil plus crumbled oregano leaves or somethign like that but i ALWAYS add feta cheese as while staying in Melbourne, most of the Greek restaurants i had visited had that as part of the ingredients. If i were lazy, i used the 2nd recipe, if i felt like a fancy version, I used the first one. Now i live in M'sia, it's difficult to find all these ethnic ingredients... Really miss Melbourne...
Anyway, hope these help.

Greek Salad + Dressing
Salata
onion, cut in half then sliced thinly
tomatoes (cut into rather large pieces)
feta cheese
Kalamata olives
cucumber (optional)
mushrooms (optional)
any other veggies (optional)
Quick version dressing for Greek salata...
juice from one lemon
2-3 cloves garlic (crushed)
Greek seasoning
oregano, basil, thyme or dill, and no other herbs
Kalamata olive oil
crush garlic into lemon juice and add greek seasoning... allow to stew while you prepare the onions for the salad. Cure onions by slicing thinly then sprinkling with salt... separate with hands into half rings then let cure in salt for about 5 minutes... rinse well and drain...
add herbs to lemon and garlic, mix well and set aside.
chop the rest of the veggies into rather large chunks then add to dressing mixture... drizzle with olive oil and serve...
OR TRY THIS SIMPLE ONE!

(amount, to taste)
Salt
Pepper
Fresh lemon juice
Extra Virgin Olive Oil
Greek oregano (optional)
Squeeze the juice of the lemon over the salad, then salt and pepper using fresh ground pepper to taste, drizzle extra virgin olive oil over the salad. (Make sure you have feta cheese with salad leaves. I don't think it's the same without...)
That is all you need. If you must you can sprinkle a little Greek oregano as well. the object is to let the flavors of the ingredients come through not mask them.
Anyway, hope these help.
