Recipe: Greek Stuffed Tomatoes (using spinach, feta and bread crumbs)

Side Dishes - Vegetables
GREEK STUFFED TOMATOES

2 tbsp olive oil
1 small onion, diced
2 cups spinach, chopped and cooked
2 tsp dried basil
1/2 cup bread crumbs
1 egg
1/2 lb feta cheese, crumbled
Salt and pepper, to taste
6 firm tomatoes, with insides scooped out

In a saucepan, heat oil and saute onion until translucent.

In a bowl, combine the sauteed onions with all remaining ingredients except tomatoes. Stuff filling into tomatoes.

Bake in a preheated, 350 degree F oven for 15 minutes.

Make 4 servings
