Recipe: Spinach Casserole and Spinach and Aritchoke Casserole (2) (using cream cheese and water chestnuts)

3 (10 oz. each) pkgs. frozen chopped spinach, thawed & drained
1 (8 oz.) pkg. cream cheese, softened
1 (8 oz.) can sliced water chestnuts, drained
1/2 cup margarine, softened
3/4 cups Italian bread crumbs
Preheat oven to 350 degrees F.
In a large bowl combine spinach, cream cheese, water, chestnuts and margarine; mix well. Spread evenly in a 12x8-inch baking dish. Sprinkle bread crumbs evenly on top.
Bake in a preheated 350 degree oven for 30 minutes.
DELECTABLE SPINACH
Servings: 8-10
4 (10 oz. each) pkg. chopped frozen spinach
2 (8 oz. each) pkg. cream cheese, softened
1/2 cup butter, melted
1 (8 1/2 oz.) can artichokes, drained and quartered
1 (6 oz.) can water chestnuts, drained, thinly sliced
1 1/2 tsp. onion powder
Seasoned bread crumbs
1/3 cup Parmesan cheese
Salt and pepper to taste
Preheat oven to 350 degrees F. Grease a 2 quart baking dish.
Cook spinach in boiling salted water until defrosted. Drain well and squeeze out excess moisture. Add cream cheese, butter, artichokes, water chestnuts, onion powder, salt and pepper to spinach and mix thoroughly. Place in greased 2 quart baking dish. Cover with bread crumbs and Parmesan cheese.
Bake in preheated 350 degree oven for 30 to 40 minutes until very hot.
SPINACH AND ARTICHOKE CASSEROLE
Servings: 6
2 (10 oz each) pkgs. frozen spinach, cooked and drained
1 (8 oz) can sliced water chestnuts, drained
1 can artichoke hearts, drained, cut into pieces
1 (8 oz.) pkg. cream cheese
1 stick (1/2 cup) butter
Line a buttered two quart casserole with artichoke hearts. Add water chestnuts and spinach. Melt butter and cream cheese over low heat. Pour over casserole.
Bake in 350 degree oven for 40 minutes.
