GREEN CHILI BITES
This recipe is one from Gooseberry Patch. I know the lady who submitted it because she teaches in our county. I haven't tried these yet, but I'm going to!
2 4-oz. cans whole green chilis, sliced and opened
2 cups Monterey Jack cheese, grated
2 cups Cheddar cheese, grated
6 eggs, beaten
salt and pepper to taste
Preheat oven to 325 degrees. Butter an 8" or 9" square baking dish. Arrange chilies on bottom of baking dish. Mix grated cheeses together and sprinkle over chilies. Blend eggs, salt, and pepper; pour over cheese and chilies. Bake for 30-40 mintues or until firm. Cut into squares and serve hot. Makes 20 squares.
