GRILLED CHICKEN BUNDLES
1/4 pound process American Cheese
4 chicken breasts, skinned, boned and cut in half
16 slices (3/4 pound) bacon
1/4 cup prepared barbecue sauce
Prepare grill for indirect heat cooking.
Cut cheese into 1/2x1x1-inch chunks. Make vertical slit in each chicken breast half to form pocket. Place cheese in pocket. Roll into a bundle and wrap criss-cross with 2 slices bacon. Secure bacon with wooded toothpicks.*
Grill, using indirect heat, about 6-inches above coals, for 30 to 40 minutes, turning every 15 minutes or until fork can be inserted in chicken with ease. Place bundles over direct heat during last 10 minutes, turning 2 or 3 times, to crisp the bacon. Brush with barbecue sauce during last 10 minutes.
*Bundles can be made ahead, wrapped and refrigerated until you are ready to grill them.
Makes 4-6 servings
