Recipe: Grilled Salmon with Garlic, Lemon and Basil - Another one again for June
Main Dishes - Fish, ShellfishGRILLED SALMON WITH GARLIC, LEMON AND BASIL
(Nonstick indoor grill pan.)
FOR THE SAUCE:
2 tbsp. chopped fresh basil
2 tbsp. fresh lemon juice
1 tbsp. extra virgin olive oil
1/2 tsp. grated lemon rind
2 garlic cloves, minced
FOR THE SALMON:
Cooking spray
4 (6 oz.) salmon fillets
1/2 tsp. kosher salt
1/4 tsp. freshly ground black pepper
To prepare sauce, combine first 5 ingredients in a small bowl and set aside.
To prepare fish, heat a nonstick grill pan over medium-high heat. Coat pan with cooking spray. Sprinkle fish evenly with salt and pepper; add fish to pan. Cover and grill 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness. Serve with sauce. Yield: 4 servings. (seving size 1 fillet and about 1 tbsp. sauce)
Calories 309, fat 16.6 g(but it is good fat), sat fat 3.6 g, mono fat 8.4 g, poly 3.5 g, 36.4 g. carbs, 1.3 g fibre, chol 87 mg, iron 0.7 mg, sodium 316 mg, calcium 27 mg.
