Recipe: Ham and Egg Cups (Bisquick, 1986)
Breakfast and BrunchHAM AND EGG CUPS
1 1/2 cups Bisquick baking mix
1/4 cup plus 2 tablespoons cold water
1 teaspoon instant minced onion
1 (2.5 ounces) package thinly sliced fully cooked smoked ham
6 eggs
Pepper
Parsley flakes
Place oven rack in low position of oven. Heat oven to 400 degrees F. Grease six 6-ounce custard cups.
Mix baking mix, water and onion until soft dough forms. Divide dough among custard cups. Press dough in bottom and up side of each cup with fingers dusted with baking mix.
Line each with 2 slices ham. Break 1 egg carefully into each cup. Sprinkle cups with pepper and parsley flakes.
Bake on low oven rack until crust is golden brown, 15 to 18 minutes.
Serve in cups or let stand 5 minutes; run knife around edges to loosen. Remove from cups.
