Recipe: Hawaiian Muffins (using crushed pineapple and coconut)

HAWAIIAN MUFFINS

"We like these muffins, not too sweet."

2 cups flour
1/4 cup sugar
1 tbsp. baking powder
1/2 tsp. salt
3/4 cup milk
2 eggs, beaten
1/4 cup oil
1 cup coconut
3/4 cup drained crushed pineapple

Sift flour, sugar, baking powder and salt together. Add milk, eggs and oil; stir until blended. Add coconut and pineapple; mix well. Fill greased muffin tins 3/4 full.

Bake at 425 degrees F for 20 minutes.
