Marbled Chocolate Mousse

Dark Mousse
8 ounces dark chocolate
1/4 cup heavy cream
1 teaspoon rum
2 tablespoons butter
4 eggs -- separated
White Mousse
4 ounces white chocolate
2 tablespoons cream
1/2 teaspoon vanilla
1 tablespoon butter
2 eggs -- sepatated

The dark and white mousses are made separately, but the method is the same.
Melt the chocolate, cream, rum or vanilla, and butter in a heavy pan over low
heat. Off the heat, add the egg yolks one at a time, stirring well after each
addition. In a clean bowl, beat the egg whites until soft peaks form. Stir a
little of the beaten whites into the chocolate mixture to lighten it, then
gently fold the chocolate into the egg whites. Repeat this procedure for the
second mousse.
In a 1 1/2 quart glass bowl, ladle half of the dark mousse, cover with all of
the white mousse, then top with the remaining dark mousse. With a knife or
spatula gently swirl the 2 mixtures together to create a marbled effect.
Refrigerate for at least 6 hours. Serve sprinkled with white or dark chocolate
shavings if desired.
