Recipe: Homemade Sausage Logs for Janet

Homemade Sausage Logs

5 pounds ground beef -- (or chuck)
5 tablespoon tender quick Morton salt
2 1/2 tablespoon mustard seed
2 1/2 tablespoon coarse ground pepper
2 1/2 tablespoon garlic powder
1 tablespoon liquid smoke

Mix all the ingredients together in a glass or ceramic bowl. Cover and refrigerate. Mix once a day for the next three days. On the fourth day, shape mixture into five 6 inch long rolls. Put rolls on a broiler pan and bake at 150F for 10 hours, turning once after 5 hours. The logs will look red when done. Extra...... you can add a little red pepper to bump it up a little.
