HONEY WHEAT PRETZELS
Source: National Honey Board
Makes 5 dozen
3 lbs. 2 oz. bread flour
3 lbs. 12 oz. whole wheat flour
1.25 oz. salt
1.25 oz. active dry yeast
3 lbs. 12 oz. water, lukewarm
7.5 oz. vegetable oil
5 oz. honey
Coarse salt, for topping
Combine bread flour, whole wheat flour, and salt.
In a mixing bowl, dissolve yeast in lukewarm water and add to flour mixture. Add oil and honey.
Knead on first speed of a 3-speed mixer for approximately 3 to 5 minutes or until smooth.
Cut dough into 3 oz. pieces and roll each into a strand approximately 20 inches long.
Fold dough strands into pretzels or any desired shape. Place on parchment lined baking sheets and sprinkle with coarse salt.
Bake at 425 degrees F for approx. 15 minutes.
