Hi thanks to all that posted on this topic. I too have very strong mouth memories of being a Kelly's' cove surfer in the mid 60s and being a teen we would go and ask for a serving of rice with sauce on top. I remember what had to be extra sharp cheddar cheese melted on top. I also remember the rice being light almost pink without onions. I know I asked the "chef" (I was a daily visitor) what was in the rice since I am of Spanish American descent and a city girl I could not place the flavors. After much begging I got a whispered "it's just rice cooked in v-8 juice" If this is true or not I couldn't tell you. Just remember how good the little rectangle paper boat and plastic fork meal was. Thanks Bill for the sauce recipe since I have been desperately searching for it.
