ISO: Re: Recipe Cup Tamales (like Hot House)
Misc.Bill, Thanks for you info on recipes for Hot House. I too when there at the age of 3 or so and the Hot House in the City and Estrada's in Colma where the first places I tried California Mexican food.
I have looked for recipe for years, but know that I read your recipe, it looks like it will taste much like what I remember. Also, curious to know what cheese they used ontop of their enchiladas. It was a cheddar parmasean looking cheese.
So, I am thinking it would be turkey broth rather than chicken broth for the sauce. Is that correct?
I have seen a handful of comments abour Veracruz sauce and mole, both of which I have made and eaten at other places. Those sauces are nothing like Hot House. There is a restaurant in Capitola, CA which has been around since 1967 called El Toro Bravo and their enchilada/tamale sauce is simliar, but not exactly like Hot House. A good second best.
