Recipe: Hot Muffin Rolls

HOT MUFFIN ROLLS

1 pkg dry yeast
1 3/4 cups warm water
2 eggs, beaten (room temperature)
1/4 cup sugar
3/4 cup butter, melted, cooled to lukewarm
4 cups self-rising flour

Preheat oven to 350 degrees F. Grease muffin pan cups.

Dissolve yeast in warm water.

Blend in eggs and sugar; stir in butter. Mix in flour until well blended.*

Spoon into prepared muffin pans 2/3 full and let rise 15 minutes.

Bake in 350 degrees F oven for 20 minutes. Remove from pan and serve hot or set on wire rack to cool.

*Batter may be refrigerated after mixing. When ready to bake, let rise 5 more minutes if cold.

Makes 18 to 24 rolls
