Recipe: How To Cook and Freeze Mash Potatoes

Here's the recipe as written in the book. I'm on a strict diet and so i can't try this method out. (i know that if i make 'em i'll break down and eat 'em ha ha!). So please one of you try it and let us all know how it turns out.

Peel your potatoes and boil them until well done. Remove and place in a bowl to mash them in. Add about 1/4 level tsp. of baking powder per two cups of potatoes. Mash the potatoes, mixing in the baking powder well. Now add just sufficient milk or cream to give the potatoes the consistency you desire and mash them well. Place in a serving bowl and sprinkle the top of the potatoes quite heavily with paprika. The baking powder keeps the potatoes snowy white and fluffy. Even any left over mashed potatoes will be white and fluffy the next day. If you freeze the mashed potatoes made with this method they will still remain white and tasty.
