RANCHERO POTATOES
4 potatoes, cooked and sliced
1/4 cup margarine
2 Tbsp. flour
1 cup milk
Salt and pepper, to taste
1/2 cup finely diced onion
1/4 cup barbecue sauce
1 cup grated cheddar cheese
Layer 1/2 the potatoes in 8x8-inch baking dish.
In saucepan, melt margarine; stir in flour. Add milk gradually, stirring constantly until thickened.
Remove from heat and stir in seasonings, onions and sauce. Stir in cheese until melted. Pour half the sauce over half the potatoes; repeat layers.
Bake at 350 degrees F for 25-30 minutes.
