How To Get Tender Pork Chops [Chinese Method]
Source: Dale in Bad Axe, Michigan, recipelink.com
water -- to cover meat
4 tablespoons baking soda (this amount may be wrong, click here for info)
pork chops -- as desired
Try soaking chops in enough water to cover meat. Remove meat and add roughly 4 TBSP of baking Soda. Put meat in and soak (in refrigerator) overnight. Rinse thoroughly and cook. Oriental restaurants have been using this for years. They can offer cuts of lesser quality as prime pieces.
