Nancy I could HUG you (or your mother in law) for your pulled pork idea! I use my pressure cooker constantly but it never occurred to me to do pork for pulled pork - it works perfectly! So fast and easy and got great succulent shreds of pork in just an hour like you said. This is really a winner and we'll have pulled pork sandwiches a LOT more often now. If you'd like to make your own sauce some day, try my favorite vinegar sauce for bbq/pulled pork etc (this is a somewhat thin sauce and can be used on cole slaw too as well as for a marinade for all kinds of meats):

1 cup vinegar (original recipe called for apple cider vinegar but I make raspberry wine vinegar and use that)
2/3 cup water
2/3 cup catsup
1/4 cup packed brown sugar
3 tsp salt
1 tsp red pepper flakes (or more if you like)
1/2 tsp black pepper
1/2 tsp white pepper

Just whisk or stir together in a nonreactive bowl and pour over the pork after you've pulled it, then rewarm when ready to serve.
