Recipe(tried): I use ground turkey and/or chicken a lot.
Misc.Yes, I read too that if you buy it prepackaged that it has the skin in it which of course would make it fattier and maybe some questionable parts in there too.
I do buy the prepackaged ground chicken and prepackaged ground turkey. I just buy it at the grocery store. Here in Canada it is about twice the price of the ground beef but I know that the meat prices in the states are much, much cheaper than ours.
If you are buying this because of serious health problems, I would inquire at a butcher and see what they grind in their and compare the price with a regular grocery store.
You can always buy a meat grinder. I don'tr know if you can use a food processor to grind the meat or not. I wouldn't think so I don't think I would use a food processor.
One other thing that I do is that I usually combine both ground turkey and ground chicken. I made burritos the other day and I just used the ground turkey mind you but if I were making burgers I would combine the two. I combine the two for this meatloaf that I make. My Father had no idea that it was ground chicken. He said it was absolutely fabulous. My ex-boyfriend also loved it. I love it too. I'll never make a ground beef meatloaf again!
I've made turkey chili, I had a spaghetti sauce at a restaurant with ground chicken in it. It was fantastic. Don't try to just replace ground beef with ground turkey or chicken. I would only use a recipe made specifically for the ground chicken or turkey.
My main board is the Healthy Cooking Board. I'm planning that my next posting will be the Ground chicken/Turkey meatloaf. I'll post it sometime this week.
If I can be of further assistance, just let me know. Like I said, the best place to get me is the Healthy Cooking forum.
