Recipe: Icebox Cake (using crushed vanilla wafers)

ICEBOX CAKE

1/2 lb. vanilla wafers, crushed
1 1/2 cups powdered sugar
1/2 cup butter or margarine
Egg Beaters (pasteurized egg product) to equal 2 eggs
1 cup crushed pineapple, drained
1 cup chopped nut meats
1 cup whipped cream (Cool Whip)

Grease an oblong or square pan. Spread half of the vanilla wafers into pan.

Cream sugar and butter together and add eggs; beat well. Add pineapple and nuts and mix. Fold in whipped cream until well blended. Pour over wafers in pan.

Sprinkle remainder of wafers over top. Refrigerate overnight before serving.
