Recipe: Indian-Spiced Pork Chops

Indian-Spiced Pork Chops

2 bay leaves, well crumbled
1 teaspoon ground cumin
1/2 teaspoon each ground ginger and coriander
1/4 teaspoon ground turmeric
1/8 teaspoon salt
8 lean rib pork chops (about 2 pounds), trimmed of fat
1 lime, quartered (optional)

In a small bowl, combine the bay leaves, cumin, ginger, coriander, turmeric, and salt. Rub the mixture on both sides of each pork chop. Cover and marinate at room temperature for 1 hour. Preheat the broiler about 5 minutes. Place the pork chops on the broiler pan rack and broil 7 or 8 inches from the heat, turning 3 or 4 times, until golden and cooked through-about 10 minutes. Garnish with the lime, if desired.
