Recipe: Easy-Bake Pork Loin Fajitas (pork roasted with beer and onions)

EASY-BAKE PORK LOIN FAJITAS

1 pork loin
2 tsp. sugar
1 tsp. ground black pepper
Salt to taste
1 onion, sliced
1 can of beer
12 corn tortillas or fajita size flour tortillas, warmed (for serving)

Rub pork loin with sugar, salt and pepper. Brown in an oiled skillet then place pork loin in baking dish with sliced onion and pour beer over meat.

Bake in 325 degree F oven for 1 hour or until done, basting occasionally with juices. Slice cooked pork into strips and serve in warmed tortillas.

Makes 4-5 servings
