RED BEANS AND RICE WITH A TASTE OF RUM
(Arroz Y Frijoles Negros Con Sabor A Ron)

1 pound black beans, soaked
2 large onion, chopped
2 stalks celery, chopped
1 large carrot, chopped
4 cloves garlic, finely chopped
1/4 cup olive oil
8 cups water, divided use
1/4 cup parsley, chopped
salt and pepper to taste
1/4 cup dark rum
2 cups white rice, cooked
Soak beans.
In large saucepan saute onions, celery, carrots, and garlic in oil for 6 minutes.
Add 4 cups water, bring to boil.
Drain soaked beans and add to water with the parsley, salt, and pepper. Cover, reduce heat, simmer 1 1/2 hours. Add more water if necessary.
Add rum to beans, stir.
Layer beans over hot cooked rice and serve.
Servings: 10
