Recipe: Pot Roast with Vegetables (using chuck roast, roaster oven)

POT ROAST WITH VEGETABLES

1 (6 to 8 lb.) beef chuck roast
2 cups baby carrots
8 medium potatoes, peeled and quartered
1 tbsp. salt (or to taste)
1 tsp. ground black pepper
2 cups beef broth
2 onion, quartered

Preheat roaster oven to 300 degrees F prior to baking (maximum 15 minutes).

Place roast in bottom of Cooking Pan. Place vegetables around sides of roast. Add salt, pepper and broth.

Cover and cook at 300 degrees F for 3 to 4 hours or until beef is tender.
