Hi Karen,
In addition to this recipe that I'm posting...I did a search
of TKL and there are several recipes that use oatmeal. You may
want to look at those also. Just go to find a recipe and when
the search box appears...type in lace cookies. The other recipes
will appear.
Lace Cookies
Makes about 40
1 stick ( 4 ozs. ) butter
1/2 cup brown sugar, firmly packed
1/3 cup light corn syrup
1 cup flour
1 cup hazelnuts or natural almonds, finely chopped ( I use walnuts
or pecans)
1 tsp. vanilla extract
1/4 tsp. salt
Preheat oven to 375 F. Grease two large baking sheets.
In a medium saucepan, combine butter, brown sugar, and corn
syrup. Bring to a boil over medium heat, stirring constantly.
Remove pan from heat and stir in flour, nuts, vanilla and salt.
Drop by teaspoonsful 3 inches apart onto cookie sheets. The cookies
will spread so make sure they are 3 inches apart. Bake 5-6 minutes
or until golden brown. Let cookies cool 1 minute on cookie sheets
and then remove to a rack and cool completely. At this point,
you can also roll the cookies around the handle of a wooden spoon
and slide off onto racks to completely cool. Store in a tightly
covered container. Enjoy! These are delicious by themselves or
broken and sprinkled over ice cream.
