Lemon Curd

Juice of 4 lemons and grated rind.
4 large eggs, beaten
1/2 cup butter
2 cups sugar

Combine all the ingredients in the top of double boiler.
Place over simmering water. Stir until sugar dissolves.
Cook stirring until thick and smooth.
