Orange Coffee Cake with Broiled Coconut Topping

Yield: 9 servings
1 1/2 cups all-purpose biscuit mix
1 teaspoon freshly grated orange rind
3/4 cup sugar
1/4 cup butter -- softened
1 egg
1/2 cup milk -- divided
1/4 cup orange juice
TOPPING:
1/4 cup butter -- softened
1/2 cup packed light brown sugar
2 tablespoons orange juice
1 teaspoon freshly grated orange rind
2/3 cup flaked coconut
Prep time: 20 minutes
Baking: 35 minutes
Combine biscuit mix, orange rind, sugar, softened butter, egg and 1/4 cup of the milk in a mixing bowl. Blend, then beat 1 minute at medium speed. Stir in remaining 1/4 cup milk and the orange juice. Beat 1 minute more at medium speed. Turn into a greased or sprayed 8-inch square baking pan. Bake at 350 degrees for 35 to 40 minutes. Cover with coconut topping while still warm. (Blend softened butter and brown sugar. Stir in the orange juice, rind and coconut.) Broil cake in its pan about 3 minutes or until coconut is lightly toasted.
