STIR FRIED BARLEY
1/2 cup pearl barley
6 cups water
salt (to taste)
1 tbsp. olive oil
1 large shallot or onion, minced
1/2 tsp. crushed, dried hot peppers
2 tsp. unsalted butter
2 tsp. chopped, fresh basil (or 1/2 tsp. dried basil)
1/2 tsp. tomato paste
pinch of beef bouillon powder
freshly ground black pepper (to taste)
Bring the 6 cups of water to a boil in a medium size saucepan. Add salt (to taste) and the barley, simmer uncovered, until tender, about 1 hour. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add the shallot or onion and dried hot peppers. Cook 2 minutes.
Stir in butter and the barley. Cook, tossing constantly, until warmed through.
Stir in the basil, tomato paste and bouillon powder. Cook 1 minute. Season with salt and pepper to taste.
Makes 4 servings
