Recipe(tried): Lunch for 200 soldiers - I would like to suggest ideas to you.

Good afternoon to you my learned friend. I would like to suggest ideas to you only today. If you decide on any of them then I shall discuss with you the recipes, & etc, for your consideration. My true & honest feelings are that I am glad you are knowledgeable in culinary because this is a large & responsible undertaking. I do not think that 2 or 3 helping hands are enough my friend. Always consider that at the last moment one becomes ill & cannot help. Try to enlist more hands even on a part time basis & for emergency event.
Now then Maylin. How does this sound. It would be wise to consider more than 1 entree. let's say 3 at minimum.

1) 7 oz chopped sirloin steak. (I call this a Hamburger steak).

2) Baked chicken (3 to 3 1/2 pound fryers baked & then cut-up into various servings parts.

3) Baked virginia ham, Canned variety much superior & easier to deal with. Served with a raisin sauce. I can supply the recipe for the ham & sauce.

Maytlin, as you can see I am trying not only to keep this project simple but also economicly affordable for you as well.

Now then Maylin, 2 types of easy potatoes.

1) Baked potatoes. Maylin, this is how I do my "BAKED POTATOES". I boil the russets or Idaho types in boiling water. Why!!! because it takes 10 minutes less time & they keep moist. In baking they tend to dry out. When done just wrap in Aluminum foil roll each one underneath your hand palm to loosen the potato meat from the skin & slice it open & then prop up the ends & walla picture perfect potato.

Also Maylin how about a modified version of "POTATOES O'BRIEN" ???. How I do this is I steam the potatoes with chopped onions. When near done I sprinkle them with paprika which gives them a rustic "Home-fries Appearance & then during the last 5 minutes I mix-in green & red peppers cut-up in 1/2 inch pieces then a little dried herbs of choice.

Maylin, These are just ideas for you to ponder. If interested post back or if Betsy will be kind enough to give you my ~E~Mail you can go either route that suits you. I will provide you with the recipes & amounts as well. If you wish to bake soft dinner rolls & or onion rye rolls I will supply the recipes as well.

Maylin I only wish I lived closer to you so that I could help you do this, I would enjoy it & it would be good therapy for my old body. Good luck & enjoy the rest of this week-end young lady.
