Recipe(tried): Make Ahead Cinnamon Rolls - A little more advice

I don't have as much experience with cinnamon rolls as Virginia, but I can give you some tips if you want to freeze them unbaked.

We like to have fresh, homemade rolls for Christmas breakfast, but I don't like having to mix, knead, and generally make a mess on a usually hectic Christmas Eve. So about 2 weeks ahead of time, I do all of the recipe steps up through the shaping, put the rolls in the baking pan. Then I cover them with plastic wrap touching the dough to exclude air, cover again with foil, and freeze them unrisen. The night before baking, I put them in the fridge where they will thaw and rise slightly in about 12 hours. In the morning, I let them rise the rest of the way in a warm place. In about 45 minutes, they will be risen enough to bake.
