Recipe: Meatloaf Cake with Mashed Potato Frosting

MEATLOAF CAKE

2 to 2 1/2 lbs. lean ground beef
1 onion, finely chopped
1 cup Italian-flavored bread crumbs
1 1/2 cup ketchup
2 eggs
1/2 tsp. salt
1/2 tsp. black pepper
4 cups warm mashed potatoes
8 cherry tomatoes, halved
parsley sprigs

Preheat oven to 375 degrees. Coat a 10-inch Bundt or tube pan with nonstick cooking spray.

In a large bowl, combine ground beef, onion, bread crumbs, 1 cup of the ketchup, eggs, salt and black pepper; mix well. Place in the prepared pan and spread remaining 1/2 cup ketchup over the top of the meat.

Bake 1 to 1 1/4 hours, or until the juices run clear; drain off any liquid. Allow to sit 5 minutes, then transfer to a serving platter.

Frost the meat loaf with mashed potatoes and garnish the bottom edge with cherry tomato halves and top with parsley sprigs.

Makes 6 to 8 servings
