Recipe: Meatloaf w/ Oatmeal

Here are a few recipes I found for you to try:

All-American Meatloaf
Yield: 12 servings

2 lb Grd chuck or sirloin
3/4 cup oatmeal
1 ts Salt
1/4 ts Pepper
1 onion
1/2 c Catsup
1 tb Horseradish
1/4 c Milk
3 tb B. sugar
2 Eggs
2 ts Mustard
1/2 c Catsup
1 TBL horseradish
3 TBL brown sugar

Combine first 9 ingredients; shape into two 7 1/2x4" loaves. Place on a lightly greased rack of a broiler pan; bake at 350 deg for 40 min.

Combine 1/2 c catsup, 1 T horseradish & remaining ingredients; spoon over meatloaf & bake an additional 5 min. Yields 2 loaves. NOTE May freeze the second loaf.

KAREN'S MEATLOAF

3 pounds lean hamburger meat
1 pkg onion soup mix
2 eggs
1 cup crushed crackers or oatmeal
or bread crumbs
1 tablespoon garlic pepper
1/4 cup catsup
1 tablespoon oregano
1 1/2 teaspoons basil
1 1/2 teaspoons lemon thyme
1 teaspoon rosemary

Put all ingredients in a bowl and mix well. Put in pan and bake in 350 for 45 minutes to 1 hour, until done.Spooned-Up Meat Loaf
Yield: 6 servings

2 lb Lean Ground Beef
1 1/2 oz Onion Soup Mix; 1 pk
1/2 c Oats; Quick Cooking
1/2 c Water
1/2 c Dairy Sour Cream
2 ea Eggs; Lg, Beaten
1/4 c Parmesan Cheese; Grated

Cook and stir the meat in a large skillet until the meat is brown. Drain off the excess fat. Stir in the soup mix, oats and water. Cover and simmer for about 5 minutes, stirring occasionally. Stir in the sour cream and eggs. Spread the mixture evenly in the skillet then sprinkle the cheese over the top. Cover and simmer until set, about 5 minutes. Serve with catsup, if desired.


Carol's Easy Meatloaf

Serving Size : 6

2 lb lean ground beef
1/2 c onion -- chopped
1/2 c green pepper -- chopped
2 eggs
1/4 c milk
1/2 c quick-cooking oats
salt and pepper

Heat oven to 375 . Mix all ingredients thoroughly and shape into a loaf in a loaf pan. Bake for about 1 hour 15 minutes.
