MEATY MANICOTTI
1 lb. lean ground beef
1/4 cup chopped onion
1 clove garlic, mashed
1 can (15 oz.) spinach, drained and chopped
1/2 cup cottage cheese
2 eggs, lightly beaten
Salt and pepper to taste
12 uncooked manicotti shells
1 jar (15 1/2 oz.) spaghetti sauce
1/2 cup (2 oz.) grated Parmesan cheese
1 cup (4 oz.) shredded Mozzarella cheese
Preheat oven to 350 degrees F. Spray a 13x9-inch baking pan with Pam, set aside.
Brown beef in skillet, add onion and garlic. Saute 3 to 4 minutes until onions are tender. Drain off fat.
Remove from heat and add spinach, cottage cheese, eggs, salt and pepper. Stir until well mixed. Fill each shell with 1/4 cup meat mixture. Place shells in pan; pour sauce evenly over filled shells. Sprinkle both cheeses over sauce.
Bake 30 minutes.
