Recipe: Mile High Lemonade Pie

MILE HIGH LEMONADE PIE

1 envelope unflavored gelatin
1/2 cup cold water
1/8 tsp salt
4 eggs separated
1 (6 oz) can frozen lemonade concentrate
l/2 cup sugar
1 cup (l/2 pint) heavy whipping cream, whipped
1 (l0-inch) deep dish pie shell, baked and cooled

Soften gelatin in cold water in top of double boiler. Add salt and egg yolks. mix well.
Place over boiling water ( use double boiler) and cook, stirring constantly until mixture thickens slightly and gelatin is disolved ( about 3-5 min).
Remove from heat and stir in undiluted lemonade.
Chill until mixture mounds slightly when dropped from spoon.
Beat egg whites until stiff, gradually adding sugar as you beat. Fold in gelatin mixture. Fold in whipped cream. Turn into baked pie shell and chill before serving.
