Recipe(tried): Minestrone in a Baggie - Drying veggies for soup/seasoning mixes
Preserving - Dried Foods We have a huge garden that supplies much of the fresh groceries we eat every year. In order to use it all, I freeze some, can some, pickle some, dry some & we eat some fresh. We do tend to go thru a LOT of fresh tomatoes when the vines are producing!
Drying fruits and veggies is a great way to preserve food while cutting down on the space and energy needed & is a great way to pack food on hikes, while camping, and for emergencies. (We've already had 10 tornadoes in this part of Oklahoma this year!)
Here's my "Minestrone in a baggie"
In a dehydrator, dry these veggies to crisp stage & then put them in a baggie in the porportions listed:
Onion slices (4 parts)
Tomato slices (8 parts -- have ground to powder)
diced celery (4 parts)
diced sweet pepper (4 parts)
sliced summer squash (4 parts)
sliced zuccini (4 parts)
diced carrots (4 parts)
corn cut from the cob ( 4 parts)
sliced hot pepper (1 part)
parsley (1 part)
basil (1 part)
chopped garlic (1 part)
In a seperate baggie, put some wide egg noodles & salt and pepper amounts to taste.
To fix: Add veggie mix to simmering water to cover. Simmer about ten minutes until re-hydrated, add a little more water if necessary & add noodles. Cook until noodles are done, salt & pepper to taste.
I sometimes use homemade venison jerky as a meat in this; but it is also quite good without.
