Recipe(tried): Mixed Garden Greens with Apples and Cider Vinaigrette - Something Similar to Saltwater Cowboys Salad Dressing

After searching for a while, I found a recipe that is very similar to the Apple Vinaigrette Salad Dressing at Saltwater Cowboys. I don't think you will find the real recipe anywhere, it appears to be closely guarded. I found the recipe at epicurious.

MIXED GARDEN GREENS WITH APPLES AND CIDER VINAIGRETTE

1/4 cup apple cider vinegar
3 tablespoons minced shallots
2 teaspoons Dijon mustard
2 teaspoons honey
1/2 cup light olive oil

12 cups mixed torn greens (such as romaine lettuce, curly endive and watercress)
1 crisp red-skinned apple, quartered, cored, thinly sliced

Combine vinegar, shallots, mustard and honey in small bowl. Add oil and whisk until well blended. Season vinaigrette to taste with salt and pepper.
Combine greens and apple in large bowl. Drizzle with vinaigrette; toss to coat.

I found that it was closer to the Cowboys dressing if I added a little sugar and a lot less of the minced shallot (onion).

We used Romaine Lettuce, Raisons, and Walnuts, and added a Granny Smith apple cut into thin slices. It came out pretty good.

We made our yearly trip to St. Augustine last week, and got to eat there twice, already missing it!
