Mocha Treats

Makes: 48
1 ounce semisweet chocolate -- chopped
1 tablespoon instant coffee granules
1 tablespoon hot water
1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
2 tablespoons vegetable shortening
1/2 cup sugar
1 large egg
1 teaspoon hazelnut extract
In the top of a double boiler, melt the chocolate over low heat, stirring until smooth. Remove from the heat. Dissolve the coffee in the hot water and stir into the chocolate.
Combine the flour, baking powder and cinnamon.
In a large bowl, cream the shortening and sugar. Beat in the egg. Beat in the hazelnut extract. Beat in the chocolate mixture. Gradually blend in the dry ingredients. Cover and chill in the refrigerator for 8 hours or overnight.
Preheat oven to 350 degrees. Lightly grease cookie sheets.
On a floured surface, roll the dough to a thickness of 1/4-inch. Using cookie cutters, cut out the shapes and place 1-inch apart on the prepared pans. Bake for 8-10 minutes, until the tops look dry. Transfer to wire racks to cool.
