Mocha-Pecan Butter Balls

Makes: 48
2/3 cup butter -- softened
3 ounces cream cheese -- softened
2/3 cup instant chocolate drink mix
1/3 cup confectioners' sugar
1 teaspoon instant coffee granules
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1/4 teaspoon salt
1 cup finely chopped pecans

In a mixing bowl, cream butter, cream cheese, drink mix, sugar and coffee granules. Beat in vanilla.
Combine flour and salt. Gradually add to creamed mixture. Stir in pecans. Cover and refrigerate for 1 hour or until easy to handle.
Roll in 1-inch balls. Place 1-inch apart on ungreased baking sheets. Bake at 350 degrees for 15-18 minutes or until firm. Cool on pan for 1-2 minutes. Roll warm cookies in confectioners' sugar. Cool on wire racks.
