Recipe(tried): Moist Zucchini Bread (using oil, pineapple, nuts and raisins)

This was given to me a few years back by my neighbor and i've never wanted for another recipe!

ZUCCHINI BREAD

2 cups sugar
1 cup oil
3 eggs
2 tsp. vanilla
2 cups grated or ground zucchini
3 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. salt
1 cup drained, crushed pineapple
1 cup walnut or pecan pieces
1/2 cup raisins

Beat sugar, oil, eggs and vanilla together until fluffy. Add zucchini, flour, baking soda, baking powder, cinnamon and salt; mix together. add pineapple, nuts and raisins; mix again. Pour into 2 greased loaf pans.

Bake at 350 degrees F for 1 hour.

Hope you enjoy this as it really is very moist!!!
