Mrs. Lamb's Fig Preserves
3 cups of figs, peeled and quaterted
2 cups of sugar
1 cup of water
Combine and bring to a boil, reduce to simmer and cook until thickened to a light syrup stage. Pour into jars and process in water bath or invert for 5 min. then turn upright to form vacuum seal.
My neighbor gave me an abundance of figs last year and her recipe. Worked great and so easy. Will seem thin but will thicken more after processing and sitting overnight.
