I am (away from my recipe box/files/stash)in Florida until mid April.
The Mustard Pork Chops were a recipe of my mother's and I believe previously from my grandmother
I am going to "wing it" here with what I remember off the top of my head (it is really more of a method than a recipe) but wonderful comfort food. Thanks for reminding me of them and they will probably be on our table also sometime this week.
MUSTARD PORK CHOPS
about 6 pork chops
slather them on all sides with plain old yellow mustard
dredge in seasoned flour
brown in oil until golden on both sides
drain excess oil from pan
stir in 1 can of cream of chicken soup
add water (I am not sure here but think that it is between 1/2 and 1 soup can full)
I usually add 1 can of drained mushroom but don't think that they are actually part of the original recipe.
Cover and simmer until the chops are "fall off the bone" tender and the gravy is the thickness you like, removing the cover at the end of cooking if necessary.
I think that we will be alright because it is one of those recipes that you almost can't wreck.
