Recipe: My Favorite Brushetta

My Favorite Brushetta

2 cups chopped fresh tomatoes, seeded and juiced before chopping (I use ripe plum tomatoes)
1/4 cup chopped FRESH basil leaves
1/4 tsp. fresh garlic, minced
1/3 cup extra virgin olive oil
2 tab. Balsamic vinegar
1 envelope (about 1 tsp.or more to taste) powdered chicken broth base (I use Wylers)

Mix together all ingredients EXCEPT chicken powder base. Can be made a few hours ahead of time. Just before serving mix in the chicken broth base. Goes great over garlic toast.
