Bacon and Double Cheese Quiche

Cut phyllo dough cut into small squares and put into mini muffin tins to make the cups.
Fill with the quiche filling and bake:

10 strips bacon, preferably lean, drained and crumbled
4 large eggs
1 1/2 cups light cream
1/4 tsp dried thyme
1/8 tsp white pepper (these are guestimations of the teaspoons, use your judgment)
1/2 cup shredded Gruyere cheese
1/2 cup shredded Cheddar cheese

Whisk the eggs, cream, thyme, and pepper together. Spoon into the phyllo cups and sprinkle with bacon and cheese. Bake 375 around 20-30 minutes or until golden and the custard is set.
