Recipe: Strawberry Fried Pies (using refrigerated biscuit dough)

STRAWBERRY FRIED PIES

3 tbsp. cornstarch
3/4 cup sugar
3/4 cup water
1 pinch salt
2 cups fresh strawberries, coarsely chopped
1/4 tsp. almond flavor (optional)
2 cans refrigerated biscuits
vegetable cooking oil (for frying)

Mix cornstarch, sugar, water, and salt in a small saucepan until thoroughly dissolved. Cook over low heat, stirring constantly until thick and clear. Add strawberries and almond flavoring and set aside while preparing pastry.

Roll out biscuits on floured board very thin. Set aside for 10 minutes.

Roll again very thin. Spread berries on half of each biscuit. Crimp together with fork.

Cook in oil at 360 degrees F until brown.

Makes 20 pies
